Smashed Garlic Potatoes (vegan)

Ingredients:

-1.5 lb honey gold potatoes

-1/2 stick vegan butter

-4 cloves fresh garlic (minced)

-1 tsp paprika

-1 tbsp fresh or dried parsley

-Salt and pepper to taste


How To:

1. Preheat oven to 375 degrees F.

2. Bring a large pot of water to a boil and add the potatoes.

3. Boil until fork tender, about 20 minutes.

4. While your potatoes are boiling, melt butter in a small saucepan over low heat.

5. Once the butter is fully melted add the freshly minced garlic and turn off the heat. Let the saucepan sit on the burner until fragrant.

7. Once fork tender, strain the potatoes.

8. While hot, place the potatoes on a baking sheet lined with parchment paper.

9. Using the bottom of a mason jar or wide glass, smash potatoes until 1/2 inch thick.

10. Pour melted garlic butter evenly over the potatoes and sprinkle with parsley.

11. Bake on 375 for 45 minutes or until golden brown.

12. Serve hot with an aioli or sauce of your choice.
