Fresh Thyme Dinner Rolls (Vegan)

Ingredients:
-2 cups all purpose flour
-1 packet Rapid Rise yeast
-2 Tb sugar
-1/2 tsp salt
-3 Tb fresh thyme, plus more for garnish
-1/2 cup almond milk
-1/4 cup water
-4 Tb vegan butter, reserve 2 Tb for garnish
-Minced onion for garnish
How To:
1. Preheat oven to 375 degrees F.
2. In a mixing bowl, combine 3/4 cup flour, yeast, sugar, salt, and thyme.
3. In a small saucepan over medium heat, melt butter. Add water and almond milk and warm to 110 degrees F.
4. Add buttermilk to dry mixture and whisk 2 minutes, scraping sides as needed.
5. Add 1/4 cup more flour and beat for another 2 minutes.
6. Add remaining flour (1 cup) and combine to create dough.
7. Transfer to a lightly floured surface and knead until smooth. Let rest 10 minutes.
8. Divide the dough into 12 pieces, shape into balls, and place in a greased 8x8 dish or 8-inch round pan. Cover with plastic wrap and let rise until doubled in size, about 30-45 minutes.
9. Melt remaining butter and combine with thyme and minced onion. Brush onto rolls.
10. Bake for 18-20 minutes, or until fluffy and light golden brown.
