Maple Balsamic Brussel Sprouts with Shiitake "Bacon" (Vegan)

Ingredients:
-1 lb Brussel Sprouts, cut in half
-3.5 oz package shiitake mushrooms, sliced
-3 1/2 Tb maple syrup
-2 Tb liquid smoke
-2 tsp coconut aminos
-1Tb nutritional yeast
-2 Tb olive oil
-1 1/2 Tb balsamic vinegar
-Salt and Pepper to taste
How To:
1. Preheat oven to 450 degrees F.
2. Remove the stem of the shiitake mushrooms and slice the tops into thin strips.
3. In a small bowl combine 2 Tb maple syrup (reserve the remaining 1 1/1Tb), liquid smoke, coconut aminos and nutritional yeast. Whisk to combine.
4. Toss sliced mushrooms in the liquid smoke mixture.
5. In a fresh bowl combine remaining ingredients (reserved maple syrup, olive oil and balsamic vinegar). Toss with the brussel sprouts and set aside.
5. Line a baking sheet with parchment paper. Bake the mushrooms at 450 for 5 minutes. (They will get dark in color due to the syrup but they are not burnt!)
6. Lower the temperature to 375 and add you brussels to the same baking sheet, tossing with the mushrooms. Salt and pepper to your desired amount.
7. Bake for 20 minutes at 375 until the brussel sprouts begin to crisp. (This is best achieved if they are not touching each other and have some room on the baking sheet).
